"Tres Leches"

Vanilla caked marinated in milk

Ingredients

Tres Leches "Milk Sirup"

  • 1 1/2 cups Evaporated Milk
  • 400 gr Condensed milk
  • 3 cups Whole Milk
  • 2 sticks Ceylon Cinnamon
  • 1 stick Cinnamon
  • 4 Cloves
  • 2 Star Anise
  • 1 tbsp Vanilla extract
  • 1 tsp Salt

Tres Leches Cake

  • 1 3/4 cups of Ap-flour (All-purpose)
  • 1 tsp Salt
  • 1 1/2 tsp Baking powder
  • 1 cup Sugar
  • 6 Eggs at room temp. (separate yolks from whites)
  • 1/3 cup Whole milk
  • 1 tbsp Vanilla extract

Garnish

  • 2 cups Heavy cream
  • 1 cup caster sugar
  • 1 Lime juiced
  • Strawberries or Cherries
  • 1/4 cup Ceylon Cinnamon Powder

Instructions

  • Set your oven at 350F - 180 C and get your eggs at room temp

Milk Syrup

  • In a pot add all the "Milk Syrup" ingredients, let it simmer until it's about to boil, set aside and let it completely cool.

Tres Leches Cake

  • Sift flour, salt, baking powder into a bowl, then reserve.
  • separate eggs from yolks. In a bowl add sugar, yolks beat until yolks are pale yellow then add vanilla extract.
  • add the flour mixture and milk into the yolks, (do not overbeat), set aside
  • Beat egg whites on high speed until soft peaks form, then fold in your previous mixture with the whites.
  • Spray baking oil to a rectangular cake pan, then add your butter to it, bake at 350F - 180C for 30 - 35 min, until the center is cooked, once cooked let it cool,
  • Once it's completely cooled, make some "holes" with a fork and add the "Milk Syrup" to the cake. (little by little, pour it all around the cake) Refriragete the cake for at least 12 hours

Garnish

  • Beat heavy cream with caster sugar, lime juice, until you get whipped cream
  • Cover your "tres leches" with whipped cream then sprinkle some Ceylon cinnamon powder on top and top it with some strawberries or cherries.
