Sopa a la criolla - Peruvian ground beef noodle soup

Sopa Criolla is a Peruvian ground beef noodle soup with ají panca, evaporated milk, and angel hair pasta, served with a fried egg on top and bread on the side. A Lima staple that eats like a full meal.

Ingredients

  • 4 tbsps Vegetable Oil
  • 6 oz Evaporated Milk half a can
  • 500 gr of Ground beef 1.1lb
  • 200 gr of Angel Hair
  • 1 Red Onion diced
  • 3 Garlic cloves minced
  • 1 Tomato peeled and diced
  • 1 Tablespoon of tomato paste
  • 1/2 tablespoon of Ají Panca Paste
  • 1 tablespoon of Paprika
  • 1 tablespoon of dried oregano
  • 4 cups of Beef Stock or Water
  • Salt and Pepper
  • 4 slices of bread
  • 4 Fried Eggs
  • 1/4 cup of chopped parsley

Instructions

  • In a hot pot add 2 tablespoons of vegetable oil, add ground meat and let it cook for 7 min , once cooked add onions , garlic, tomato,tomato paste, ají panca and let it cook for another 5 min.
  • Once its cooked add beef stock , spices and pasta, put a lid on and let it cook until Angel hair is cooked.
  • Once its cooked serve with bread, fried egg on top and sprinkle some parsley.
