Sopa a la criolla - Peruvian ground beef noodle soup
Sopa Criolla is a Peruvian ground beef noodle soup with ají panca, evaporated milk, and angel hair pasta, served with a fried egg on top and bread on the side. A Lima staple that eats like a full meal.

Ingredients
4tbspsVegetable Oil
6ozEvaporated Milkhalf a can
500grof Ground beef1.1lb
200grof Angel Hair
1Red Oniondiced
3Garlic clovesminced
1Tomatopeeled and diced
1Tablespoonof tomato paste
1/2tablespoonof Ají Panca Paste
1tablespoonof Paprika
1tablespoonof dried oregano
4cupsof Beef Stock or Water
Salt and Pepper
4slicesof bread
4Fried Eggs
1/4cupof chopped parsley
Instructions
In a hot pot add 2 tablespoons of vegetable oil, add ground meat and let it cook for 7 min , once cooked add onions , garlic, tomato,tomato paste, ají panca and let it cook for another 5 min.
Once its cooked add beef stock , spices and pasta, put a lid on and let it cook until Angel hair is cooked.
Once its cooked serve with bread, fried egg on top and sprinkle some parsley.
