In a pan add some oil then cook your beef then reserve.
clean the Ollucos and cut them.
In the same pan add onions, garlic, Panca paste, Ají Mirasol and let it cook until tender.
Add your Ollucos, potatoes, beef stock, and beef to the mix, let it cook until tender, then add seasoning, butter, and parsley, give it a stir and its good to go.
Notes
Use any cut of meat, just make sure it has some fat, fat will add some flavor to the dish.
Butter is completely optional but makes this dish taste better.
