"Ollucos"

Ingredients

  • 750 gr Ollucos cut into bite sizes
  • 500 gr Beef 1/2 lb cun into chunks
  • Vegetable Oil
  • 1 tbsp Butter
  • 1 Diced Red Onion diced
  • 3 Garlic Cloves minced
  • 2 tablespoon of "Aji Panca paste"
  • 1 teaspoon Ají Mirasol paste
  • 1/4 cup of beef stock
  • 2 Tablespoons of chopped parsley
  • 1 Tablespoon of paprika
  • 1 teaspoon of cumin
  • Salt & Pepper

Instructions

  • In a pan add some oil then cook your beef then reserve.
  • clean the Ollucos and cut them.
  • In the same pan add onions, garlic, Panca paste, Ají Mirasol and let it cook until tender.
  • Add your Ollucos, potatoes, beef stock, and beef to the mix, let it cook until tender, then add seasoning, butter, and parsley, give it a stir and its good to go.

Notes

  • Use any cut of meat, just make sure it has some fat, fat will add some flavor to the dish.
  • Butter is completely optional but makes this dish taste better.
