"Olluco with Meat"

Today I share my recipe for Ollucos with meat, this is a stew, fast and very tasty, the Ollucos are very similar to a potato, both are tubers, Ollucos are also known as “Papa Lisa” or “Melloco” in other regions of the country, This dish was prepared by my mother and grandmother on cold days and honestly I did not like it much as a child, this recipe seeks to rescue those flavors of Olluco with meat and balance them a little so that people of all ages can enjoy them

Where can I get Ollucos? – In markets, you can find canned or frozen, if you are in Peru, Ecuador, or near these countries, you can also find fresh.

Is this dish spicy? – Peruvian Food in general has some spice but it should not be so spicy

Is this an appetizer or a main course? – We serve this in Peru as the main dish, and they accompany it with rice.

Ingredients

  • 750 gr Ollucos cut into bite sizes
  • 500 gr Beef 1/2 lb cun into chunks
  • Vegetable Oil
  • 1 tbsp Butter
  • 1 Diced Red Onion diced
  • 3 Garlic Cloves minced
  • 2 tablespoon of "Aji Panca paste"
  • 1 teaspoon Ají Mirasol paste
  • 1/4 cup of beef stock
  • 2 Tablespoons of chopped parsley
  • 1 Tablespoon of paprika
  • 1 teaspoon of cumin
  • Salt & Pepper

Instructions

  • In a pan add some oil then cook your beef then reserve.
  • clean the Ollucos and cut them.
  • In the same pan add onions, garlic, Panca paste, Ají Mirasol and let it cook until tender.
  • Add your Ollucos, potatoes, beef stock, and beef to the mix, let it cook until tender, then add seasoning, butter, and parsley, give it a stir and its good to go.

Notes

  • Use any cut of meat, just make sure it has some fat, fat will add some flavor to the dish.
  • Butter is completely optional but makes this dish taste better.

We start with the meat, and choose a cut with some fat, fat adds flavor to the stew.

Let the onions and garlic, cook until translucid,  Aji Panca will add some balance to the mix.

Tubers like Olluco do not need much water to be cooked, more than 80% of Ollucos are made up of water.
