CORNSTARCH ALFAJORES

Today I share my recipe of cornstarch Alfajores, Alfajores are one of those desserts that one prepares when in love, to do a bake sell or a party, it is rare to prepare this dessert just by whim, however, there have been times that I have prepared it alone for a whim, Alfajores consist of a sandwich of cookies, filled with dulce de leche. This version includes cornstarch in the dough but you can see the original version here.

Equipment

  • cookie cutter of diameter of 2 inches
  • Rolling Pin
  • Parchment Papper

Ingredients

  • 300 gr of Flour if you can get pasty fine pastry flour is better
  • 200 gr of Cornstarch
  • 120 gr of Caster sugar
  • 2 sticks of Margarine about 226 gr
  • 1 Yolk
  • Pinch of Salt
  • 400 gr Dulce de leche
  • 1 tbsp Evaporated milk optional
  • Extra Caster sugar for garnish

Instructions

  • Sift all the dry ingredients, then add butter, and integrate with a fork.
  • add yolk, integrate, add milk just enough to make all the dough to get together.
  • let the dough rest for 30 min on the fridge. once rested roll your dough about 1/2 inch maybe a bit thinner
  • With the help of a cookie-cutter shape the dough and put the dough on a tray
  • Cook it on your oven at 350 F or 180 C for 10 minutes
  • Once it's cooked, put some dulce de leche on one side of a cookie and cover with another cookie to get a sandwich then finish with some caster sugar on top

the ingredients are very simple to get, the only thing to keep in mind is to have them at room temperature (not extremely cold)

Sifting the dry ingredients is important, this will add air, remove lumps, and make sure all the ingredients are integrated.

You can use both butter or margarine, I personally like the texture of the margarine but the flavor that the butter gives is better.

Alfajores being cut

There are no “secrets” in making Alfajores, just patience, I recommend using a fork to integrate the flour with the butter, do not over-knead the dough, this dough is delicate, and if you knead too much the cookies will be hard
