"Qapchi"

Today I will be sharing a recipe I picked up during my travels arround Peru, Qapchi a dish from Ayacucho, Ayacucho is a region in Peru that has so many good dishes that is hard to just say that one is a staple however Qapchi is definetly a dish that represents the region,  since it has simple ingredients and yet the flavor is just amazing, the creamy texture and the touch of spiciness provided by the rocoto it is just the perfect combination.

Ingredients

  • 300 gr of "Queso Serrano" or Goat Cheese
  • 1/4 cup of Evaporated milk
  • 1/4 cup of "Huacatay leaves" or 1 tbsp of Huacatay paste
  • 1/2 cup of Spring onion leaves
  • 1 teaspoon of "rocoto paste" or a quarter of fresh rocoto
  • 2 tablespoon of vegetable oil
  • Salt and pepper to taste

Instructions

  • In a bowl add the cheese then crumble it , after that add milk, huacatay and rocoto paste, integrate
  • Once its integrated add oil, spring onion, 1/2 teaspoon of salt and teaspoon of pepper give a good stir and its good to go, add more salt if needed usually goat cheese has a good amount of salt , it is not necessary to add more.
  • Serve it along boiled eggs and cooked potatoes

We start with the cheese it has to be something with flavor an artisanal cheese would be ideal, however, goat cheese could be a good replacement too.

I am a big fan of fresh ingredients however, I know that sometimes that is not possible, which is why I used either frozen ingredients or canned they both are good replacements.

Qapchi sauce

To get the texture right you have to use a pestle and mortar or maybe a fork.

I know it might look like a pretty simple dish, but I can assure you that, this dish is unique, we have so many types of sauces in our cuisine this one is definitely one you need to try
