Hello lovely readers , today I am sharing with you my recipe of Peach Pie , It might be true that Pies are not something we prepare in Latin America so often but when prepare them we bake them with love and we use a “secret ingredient”
Some tools/Ingredients I used , will be at the bottom of the post
Peach Pie | Servings: 6 – 8
Dough
- 1 1/4 All purpose flour
- 1/4 Cup of Caster Sugar
- 1 Teaspoon of Salt
- 1 Stick (about 125 gr) of Butter, cut into cubes
- 1 Tablespoon of Ceylon Cinnamon powder
- 1/4 cup of cold water (maybe a little bit less)
- 1 Beaten Yolk (For the egg wash)
Filling
- 1 lb of Peach peeled and sliced
- 3/4 Cup of Sugar
- 1 Ceylon Cinnamon stick
- 2 Cloves
- 1 Teaspoon of salt
- 1 Tablespoon of unsalted butter
- Juice of one lime
- 1 Tablespoon of cornstarch
Ingredients are easy to get , the “secret ingredient” for this Pie is the Ceylon Cinnamon stick also know Mexican cinnamon , Ceylon cinnamon has a different flavor and aroma , more floral that is awesome for a lot of desserts (I love this kind of cinnamon)
Steps :
- In a food processor add your dry ingredients and butter blend add water little by little , just enough to get it together.
- If you are integrating it by hand use a fork to make the work easier for you, you are looking for a consistency like sand (let the butter get a little bit softer to make it easier for you) add water little by little just enough to hold the dough together.
- For the stuffing , in a pot add butter , sugar , cinnamon , cloves , peach , salt and let it cook , for at least 15 min in low/medium heat , once its cooked remove cinnamon and cloves then dissolve the cornstarch in the lime juice and add it to the stuffing let it get to a boil and turn it off.
- Roll your dough and put it in your baking pan , bake your dough for at least 10 min at 350F/180C , one its done it might be still be raw but this we will bake it again so do not worry , after this stuff you dough , you can stile your dough as you want, I saved some peaches to give my pie a nice look.
- Bake it again at 350F / 180C for at least 25 min , after 20 min passed egg wash your dough (if necessary) let it cook for another 5 min and its done!
