Hello lovely readers , today I am sharing my recipe of Picante de Quinoa , this recipe is really delicious and this dish give us an idea of how the “Incas ate” , their diet was grains like quinoa , chilies like (aji amarillo) , potatoes (Peru has more than 3k varieties of potatoes) , that is why I consider this dish really Peruvian, you can make this dish as spicy as you want, give it a try, I know you will love it.
Some tools/Ingredients I used , will be at the bottom of the post
Picante de Quinoa | Servings: 2 Cups
- Vegetable Oil
- 2 Cups of cooked quinoa
- 1.5 Cups of Evaporated milk
- 100 gr of “Queso fresco” or Ricotta Cheese , crumbled
- 1 Red onion, diced
- 3 Garlic cloves, minced
- 2 Tablespoons of Aji amarillo paste
- 1 Teaspoon of Tumeric(optional)
- 1 Tablespoon of sugar
- 1 Tablespoon of paprika
- Salt and Pepper
- 4 Cooked Potatoes
Steps :
- In a pan at medium/high heat add 2 tablespoons of vegetable oil then add onion, garlic, aji amarillo paste and let them cook for at least 7 min.
- Once its cooked add quinoa , milk , sugar , a teaspoon of salt ,pinch of pepper, paprika, turmeric, and let it cook for 3 more min then turn off and add cheese stir and its good to go.
That is it guys , a simple dish that you can prepare at home , serve this dish with some cooked potatoes and boiled eggs , give it a try you wont regret it.
