Tres Leches – Three Milks Cake
Tres leches a Latin American staple , in Peru we prepare this dish in special occasions such as a birthdays or any kind of anniversary, I really like this cake, it is full of flavor and its the perfect dessert for a family reunion, best part is that even if you fail on the cake you can get away with it. This cake needs to rest on your fridge for at least 12 hours. It might be a turn down for some people but it is worth waiting.
Since it is prepared in some Latin American countries, there are different versions of it, today I will be sharing my version of Tres Leches
What exactly “Tres Leches” is?
The literal translation would be “Three Kinds of milk”, this dessert is a spongy cake (usually vanilla cake) that it is soaked in a milk syrup, there are some spices added to the milk syrup to make it taste better. once the cake is soaked, it has to rest for at least 12 hours, after that time flavors are set and it is served cold.
What makes “Tres Leches” special?
As I mentioned there are several versions of it, however, the kinds of milk used, and spices give this cake a unique flavor. It also has a different texture than any other cake, since it is submerged in a milk syrup, it is like eating a spongy wet cake full of flavor.
What kind of “Milk” are in “Tres Leches”?
In this recipe we are using, whole milk, condensed and evaporated, we are also using heavy cream to get whipped cream (topping).
What if I am Lactose Intolerant?
There are always some alternatives, I personally like coconut milk and coconut condensed milk, they are great alternatives, lactose-free milk, Almond milk, Soy milk are also good alternatives. the process would be exactly the same the only thing that would change are the “milks”
I love “Tres Leches” , it is a dessert that can be prepared ahead of time, It can last about 3 – 4 days refrigerated however when I prepare it, I always share it with my friends and because of that it does not last on my fridge for more than 1 day.
"Tres Leches"
Ingredients
Tres Leches "Milk Sirup"
- 1 1/2 cups Evaporated Milk
- 400 gr Condensed milk
- 3 cups Whole Milk
- 2 sticks Ceylon Cinnamon
- 1 stick Cinnamon
- 4 Cloves
- 2 Star Anise
- 1 tbsp Vanilla extract
- 1 tsp Salt
Tres Leches Cake
- 1 3/4 cups of Ap-flour (All-purpose)
- 1 tsp Salt
- 1 1/2 tsp Baking powder
- 1 cup Sugar
- 6 Eggs at room temp. (separate yolks from whites)
- 1/3 cup Whole milk
- 1 tbsp Vanilla extract
Garnish
- 2 cups Heavy cream
- 1 cup caster sugar
- 1 Lime juiced
- Strawberries or Cherries
- 1/4 cup Ceylon Cinnamon Powder
Instructions
- Set your oven at 350F - 180 C and get your eggs at room temp
Milk Syrup
- In a pot add all the "Milk Syrup" ingredients, let it simmer until it's about to boil, set aside and let it completely cool.
Tres Leches Cake
- Sift flour, salt, baking powder into a bowl, then reserve.
- separate eggs from yolks. In a bowl add sugar, yolks beat until yolks are pale yellow then add vanilla extract.
- add the flour mixture and milk into the yolks, (do not overbeat), set aside
- Beat egg whites on high speed until soft peaks form, then fold in your previous mixture with the whites.
- Spray baking oil to a rectangular cake pan, then add your butter to it, bake at 350F - 180C for 30 - 35 min, until the center is cooked, once cooked let it cool,
- Once it's completely cooled, make some "holes" with a fork and add the "Milk Syrup" to the cake. (little by little, pour it all around the cake) Refriragete the cake for at least 12 hours
Garnish
- Beat heavy cream with caster sugar, lime juice, until you get whipped cream
- Cover your "tres leches" with whipped cream then sprinkle some Ceylon cinnamon powder on top and top it with some strawberries or cherries.
This dessert is full of flavor, infusing the “milks” with some spices boost takes this cake to another level.
The cake has a similar texture to an Angel cake, the cake should have an airy, spongy texture.
Once the cake is done, make some holes with the help of a fork, then pour the milk syrup over it, and refrigarate overnight.
Tres Leches is one of those desserts that everyone loves, airy texture, an explosion of flavors, goes really well with a strong coffee to balance the sweetness of this dessert.
