Hello, dear readers, today I am sharing with you my recipe of “Sopa Seca” , this dish is usually served with “Carapulcra” , they complement each other , but if you think about it “Sopa Seca” has pasta and “Carapulcra” has potatoes that is a lot of Carbohydrates but that is how we ate in Peru, we used to eat a lot of carbohydrates but Peruvian food is changing and the new generation of cooks are adapting dishes to make them more healthier , tastier and balanced. So do not be afraid to try Sopa Seca at home , it is really tasty even though you do not eat it with “Carapulcra”

Sopa Seca | Servings: 4

Ingredients :

  • 500 gr of cooked spaghetti
  • 4 Pieces of Hen or Chicken
  • 1 Red onion diced
  • 3 Garlic Cloves , minced
  • 1 Shredded carrot
  • 1 Tablespoon of “Aji Panca Paste”
  • 1 Tablespooon of Paprika
  • 1 Cup of basil leaves
  • 1/4 Cup of chopped parsley
  • 2 Cups of Water
  • 1 Tablespoon of sugar
  • Salt and Pepper

You can prepare this dish with Hen or Chicken , hen will boost the flavor of this dish, making it really tasty so use it if you can.

Steps :

  • In a hot pot add 3 tablespoons of oil then seal your chicken/hen 3 minutes each side then reserve.
  • In the same pot add onions, garlic, carrots, “aji panca paste” and let it cook for at least 5 min or until tender.

  • Once its cooked, process it with the basil leaves and 1 cup of water , return it to the pot add the chicken back, the chicken should be cover in water (add more water if needed), let it cook for at least 7 more min (15 – 20 if using hen or until tender)

  • While its cooking add 1 tablespoon of salt , sugar, pepper and let it finish , once its finished add the cooked pasta and parsley.

That is it guys , this dish is really tasty you can eat it with a salad in Peru we eat it with some “Sarsa Criolla” , I think you will like this dish , try it out you wont regret it.
