“Arroz Arabe” – Peruvian Style Pilaf Rice

“Arroz Arabe” is a kind of Pilaf Rice Peruvian people prepares on Holidays, especially on Christmas. There are many ways of making this dish, I really like this dish since it is really easy to prepare. Christmas for me is one of my favorite times of the year since I get to do what I love the most cook and share with others. I usually cook for all my family and get to eat a lot of food, this dish is a great way to express your love to your close ones.

What is the water/rice ratio for this recipe?

My personal water/rice ratio is for every cup of rice 1.5 of water, but that will change depending on the kind of rice you are using.

What type of rice should I use?

Depending on where you live, you could use any rice you have on hand, I love long-grain rice, good quality ones that don’t break easily. if you are in Peru you can go with Saman, Jazmin another great alternative.

If I don’t want to use coke what other alternatives do I have?

Dark Soy Sauce or Sweet Soy Sauce are both great alternatives, this dish is really simple to prepare, and you can play around the ingredients to suit your needs, you can even replace the rice with buckwheat or quinoa to make it healthier.

Ingredients

  • 2 Tablespoons of Vegetable Oil
  • 3 Garlic Cloves chopped
  • 2 cups of Rice Jazmin or any other rice
  • 2 cups of Coke
  • 1 cup of Water
  • 2 cups of Angel hair chopped
  • 1 cup of Raisins or grapes
  • 1/2 cup of Chopped Nuts
  • 3 tablespoons of Soy Sauce
  • 1 teaspoon of Salt
  • Pepper to taste
  • 2 Star Anise
  • 3 Cloves

Instructions

  • In a hot pot add vegetable oil, then brown the angel hair, stir constantly or it will burn.
  • Add rice, garlic, give it a quick stir then add coke, water, raisins, nuts, soy sauce, salt, cloves, star anise, and pepper, stir and let it cook for 20 min with a lid on.
  • Once it is cooked you can add more raisin and nuts(optional)

To nail this dish you need to measure the rice, add the right amount of water, cover it properly and let it cook properly.

This rice is full of flavor, has different textures and aromas.

Once your rice is cooking, you just need to let it cook, do not open the lid every 5 min to check “if it’s cooking” otherwise, it won’t cook!
