Today I share my recipe of Tallarin Saltado, this is a quick beef stir fry, really similar to a “Lomo Saltado”. However this time we will be using pasta/noodles for this dish instead of fries, so if you are a fan of quick pasta dishes, you are going to love this one, I know two variations of this dish, the ones they make at home (Like this recipe) and the ones they sell at a “Chifa” (Peruvian-Chinese restaurants) both have some similarities and differences but they use the stir fry technique, you can find our “Chifa Tallarin Saltado recipe here.

I made this dish often since my dad and brother love Lomo Saltado but you know you can’t eat Lomo Saltado every day, this tastes  similar to it, so they like this dish too. I have been working hard on this recipe and I am sure that you will be able to make at home. 

Here are some common questions.

What kind of Pasta should I use? the answer is your favorite, you can use egg noodles, fettuccini, spaghetti, etc, use what you have in hand and it will be fine. 

Is this dish spicy? Peruvian food in general has some heat but it shouldn’t be spicy 

Is this an entree or a main dish? We serve this in Peru as a main dish.

How can I stir fry properly? The trick to properly stir fry is heat, you want your wok/pan to be hot, also cooking in batches will make the ingredients to cook properly. If you add all at once, you will end up with a stew rather than a stir fry, finally having the ingredients cut into bite pieces will make them cook faster.

Ingredients

  • 300 gr or 1/2 lb of Cooked Pasta or noodles
  • 500 gr of meat cut into strips
  • Vegetable Oil
  • 1/2 tablespoon of minced ginger
  • 3 Garlic Cloves Minced
  • 2 Red Onions cut into wedges Core removed
  • 3 Tomatoes cut into wedges
  • 3 "Aji Amarillo" or 1 Orange Pepper into Julianne
  • 5 tablespoon of Soy Sauce
  • 1 tablespoon of Oyster sauce
  • 1 tablespoon of Red Vinegar
  • 1 tsp Ají Amarillo Paste
  • 3 tablespoons of chopped cilantro
  • 1 tablespoon of sesame oil
  • 1/8 cup Beef stock
  • Salt and Pepper

Instructions

  • In a hot pan add 3 tablespoons of vegetable oil, cook your meat 2 min per side, and reserve.
  • In the same pan add garlic, ginger they will cook fast 1 min then add onions, pepper or "Ají Amarillo" and Ají Amarillo paste, Stir fry and let it cook for about 2 min.
  • After that add tomatoes, the cooked meat, pasta/noodles, soy sauce, oyster sauce, vinegar, beef stock and let it cook for 1 min then turn off the heat add salt pepper, cilantro, sesame oil, give it a good stir and its good to go!

Have your ingredients ready before you start cooking, after all, it is a stir fry.

Having the right cut if the meat will make the job easier however you can always marinate your meat on papaya seeds, pineapple or honey to make it tender

Onions and peppers being cooked

If you are not a fan of onions because of their strong flavor, you can quickly “pickle” them with 2 tbsp of sugar and 5 tbsp of vinegar in a bolw, this will remove some of the “onion” flavors.

When using soy sauce always add salt at the end after tasting, because some brands of soy sauce have a lot of sodium and if you add salt at the beginning you might end up with a super salty dish, if that happened to you, you might fix it by adding more pasta or some tomato paste.

Tallarin Saltado, one of those dishes that are just simple and delicious, try it at home, remember that this dish is a stir fry so it is meant to be eaten right after it is done, otherwise the flavors won’t be the same! try it at home at let me know if you like it or not.
