We Visited Inka Fé – Restaurant Review
This post is a sum up of our visit to Inka Fé, a Peruvian bakery in Great Neck, Long Island
“Caigua Rellena”
Caigua, stuffed with beef, and veggies, served over rice.
“Anticuchos”
Beef heart skewers, marinated in spices and in a Peruvian pepper paste, served with potatoes/corn with a spicy sauce.
“Seco de Mariscos”
“Seco de Mariscos”, is a creamy stew with some seafood, great aroma, and texture in one quick dish.
“Lasagna de Ají de Gallina”
Ají de Gallina (Creamy spicy hen stew) turned into a Lasagna
“Pollo a la Brasa”
Peruvian blackened chicken, rotisserie chicken, one of the most iconic Peruvian dishes.
“Causa Escabechada”
Causa Escabechada, Spicy Sour Potato dough, served with Fish Escabeche on top
“Chupe de Camarones”
Chupe de Camarones, Peruvian style shrimp soup, has a thick texture, has some sweet, spicy, flavors.
“Kam Lu Wantan”
Chifa dish, saute meats and veggies served with a sweet-sour tamarind sauce and wontons.
“Pan con Chicharron”
Pan con chicharron is a pork belly sandwich, full of textures and flavors!
“Budín” – Latin American Bread Pudding
Today I am sharing with you my recipe of Budín.
“Budín” is a Latin American staple, this dessert is the Latin American version of a Bread Pudding.
At home, my uncle Rolando used to prepare this dessert, He does not cook often that is why seeing him baking was something special, although he is joking most of the time, he can be serious too especially when cooking.
Before I got into cooking I relied on others to get the food that I wanted. I asked my uncle more than once to prepare Budín for me. His recipe was really simple and everyone was really happy with it.a
the truth is that bread pudding is a humble dessert made with “old bread” however I always try to make food more appealing that is something I learned when working with restaurants, little things matter especially when cooking.
What kind of Bread I can use?
Any kind of “soft” bread you have on hand, bread with hard crust can be really hard to chew that is why I do not recommend using it.
What is the difference between Bread Pudding and Budin?
To be honest, they are pretty similar, every recipe has a twist or it adds or removes some ingredients, I consider this recipe my version of Bread pudding.
Can this be stored?
Bread pudding has some dairy on it, so it must be refrigerated, and it will last on your fridge to 3-4 days.
"Budin"
Ingredients
Budin dough
- 800 gr Bread cubed
- 2 lt Whole Milk (8 cups)
- 2 tablespoons of Butter
- 1.5 cups Sugar
- 2 tablespoons Anise seed
- 2 Star anise
- 2 sticks of Cinnamon
- 3 cloves
- 1/4 cup Rum or your favorite liquor
- 1 cup Raisins soaked in water
- 1 tablespoon Vanilla Extract
Caramel
- 2 cups sugar
- 1/2 cup of Water
Chocolate Glaze
- 1 can Condensed milk (about 14 oz)
- 3 oz Unsweetened chocolate chips (about 90 gr)
- 1/4 cup Heavy cream if needed
Instructions
- Let's infuse our milk, in a pot add milk, butter, anise, and other aromatics, sugar and let it infuse in low/medium heat until it's about to boil then let it chill.
- Start the caramel, in a pan add sugar, water and let it cook till you get a brown(not black) thick texture, then pour it into a cake mold. (I used a 9x14 inch cake pan)
- Once the milk chilled, strain it. Then submerge your bread into the milk, add once egg at the time, integrate your ingredients (use a hand mixer if possible), add raisins, rum pour the butter to your baking pan and bake it in a preheated oven at 350 F / 180 C for 45 - 60 min in a Bain Marie.
- For the chocolate glaze add ingredients to a pot then let the chocolate melt and integrate with the condensed milk, use while hot add cream if is too thick.
Notes
Infusing the milk is will provide a lot of flavor to the bread pudding
Let your bread soaking in the milk until it is starting to fall apart, use a hand blender if needed.
I like using a hand blender to remove the chunks, in that way you will end with a really soft texture if you do not have a hand blender you could use a regular blender or a hand mixer
Once it is baked you could either eat it hot or cold, you could eat it as that or you could…
