We Visited Inka Fé – Restaurant Review
This post is a sum up of our visit to Inka Fé, a Peruvian bakery in Great Neck, Long Island
“Caigua Rellena”
Caigua, stuffed with beef, and veggies, served over rice.
“Anticuchos”
Beef heart skewers, marinated in spices and in a Peruvian pepper paste, served with potatoes/corn with a spicy sauce.
“Seco de Mariscos”
“Seco de Mariscos”, is a creamy stew with some seafood, great aroma, and texture in one quick dish.
“Lasagna de Ajà de Gallina”
Ajà de Gallina (Creamy spicy hen stew) turned into a Lasagna
“Pollo a la Brasa”
Peruvian blackened chicken, rotisserie chicken, one of the most iconic Peruvian dishes.
“Causa Escabechada”
Causa Escabechada, Spicy Sour Potato dough, served with Fish Escabeche on top
“Chupe de Camarones”
Chupe de Camarones, Peruvian style shrimp soup, has a thick texture, has some sweet, spicy, flavors.
“Kam Lu Wantan”
Chifa dish, saute meats and veggies served with a sweet-sour tamarind sauce and wontons.
“Pan con Chicharron”
Pan con chicharron is a pork belly sandwich, full of textures and flavors!
Condesas
Today we are sharing the recipe of Condesas.
Condesas, or Condesitas are an old “Artisanal Cookie” that is made all around South America I won’t say it’s originally from Peru, however, the recipe I am sharing with you it’s extracted from an old recipe book I got on my trip to Arequipa (Beautiful city on the south of Peru), these cookies are amazing since they require few ingredients, bake really fast and they taste really good! so I suggest that if you are not into baking this is a great way to start.
What does Condesa mean?
The Literal translation would be a Cout’s or an Earl’s wife. When South America was a colony of Spain there was a lot of Cout’s on different areas there are stories about some of them being unfair and mean with their people, so mean that people had to look for the “Condesa” in order to be heard, some Condesas were a little more understanding, and helped their people. That is how this cookie born a cookie that reminded people how a Condesa is, someone that looked a bit rough outside but is sweet in essence, this is obviously just speculations since there is no document to prove this theory. “Condesas” are “Artesanal” cookies, they are meant to be simple, and delicious. Their basic ingredients are: A type of Starch + a type of Butter + a type of Sugar + flavor.
"Condesas"
Ingredients
- 250 gr All-Purpose flour
- 250 gr Unsalted Butter room temperature
- 180 gr Caster Sugar
- 1 tsp Sal
- 1 tbsp Sesame Oil
- 3 tbsp Cold Water if necessary
- 1 Yolk
- 3 tbsp Sesame Seeds
Instructions
- Set your oven temperature at 340F or 170C
- In a bowl sift flour, caster sugar, salt, then add butter, sesame oil, integrate and add water if necessary.
- make little balls the same size, lay them on a tray with parchment paper.
- then with your thumb, press them gently in the center, 'till they are a bit flat.
- Egg wash your cookies then sprinkle some sesame seeds on top, bake them for 25 min or till golden.
Notes
- For the ones that love cookies, you will see that this recipe doesn't let the dough to rest, that is because the recipe that inspired me was when fridges were not a thing.Â
- This recipe renders 25 - 20 gr cookiesÂ
Sifting your ingredients will provide some softness to your cookies and it will help to incorporate the ingredients properlyÂ
there is no need to let the dough rest, how ever make sure it is well integrated, do not over-knead otherwise you will end with extremely hard cookies.
Don’t forget that your oven has to be at the right temperature before even starting this recipe, otherwise the time required to bake your cookies will be a bit different.Â
Condesas are simple cookies made with humble ingredients that are really common in South America, one of those cookies that go well with any beverage.

I made these cookies for a cookie exchange. My friends liked these ones the best. I wasn’t quite sure how they would taste because they were flat. They didn’t look like the picture. They remind me of a toffee taste. I’m making them again for a second cookie exchange.
Tried the recipe for the second time after converting grams to cups. I didn’t calculate right the first time. They came looked more like the cookies in the picture. This cookie is so awesome thanks for posting it.
