We Visited Inka Fé – Restaurant Review
This post is a sum up of our visit to Inka Fé, a Peruvian bakery in Great Neck, Long Island
“Caigua Rellena”
Caigua, stuffed with beef, and veggies, served over rice.
“Anticuchos”
Beef heart skewers, marinated in spices and in a Peruvian pepper paste, served with potatoes/corn with a spicy sauce.

Peruvian blackened chicken, rotisserie chicken, one of the most iconic Peruvian dishes.

Vainita Saltada
Today we will be sharing the recipe of “Vainita Saltada” this Peruvian Green Beans stir-fry is a quick recipe that you can make in no time!
I am all about balance meals and eating healthy can provide all sort of benefits. Said that, green beans are the star of this dish, they are healthy, a great source of fiber and vitamin A,C and K.
There are many ways of making this dish, the recipe I am sharing with you, got some inspiration from the one my grandma used to prepare for me, my grandma likes to cook a lot, she used to make this quick stir-fry when she run out of ideas. I grew up eating a wide variety of dishes and this one was one of my favorites, it was because of the french fries, I won’t lie to you, I love french fries and green beans.
What might be interesting for you is the fact that Peruvians mix fries on a stir-fry, well we got over 3 thousand different kinds of potatoes, I guess we start experimenting and being creative over the time and when Chinese arrived and shared their culture we were not afraid of using local ingredients, I believe you will love this stir-fry, Vainita Saltada is a humble but delicious dish.
What cut of meat should I use?Â
I recommend going for a lean cut of meat since it cooks fast, however you could use your favorite cut of beef, you could even go for chicken, if you are not a meat person you could go for mushrooms, shitake or even tofu are great replacements, adding the eggs into the sautee provides extra flavor!
How can I make my meat “tender”?
There are a lot of alternatives, you could use a tenderizer, you could leave the meat marinating overnight with papaya seeds, you could leave the meat marinating for 8 hours with some honey, those are some alternatives to make any meat tender.
"Vainita Saltada"

Ingredients
- vegetable oil
- 500 gr of a lean cut of meat cut into bite size
- 3 cups of Green Beans cut into bite size
- 2 Red Onions cut into bite-size
- 2 Tomatoes cut into bite-size
- 1/4 cup of Cilantro leaves
- 1/4 cup of Soy Sauce
- 1 Tablespoon of "Ajà Amarillo paste"
- 1 tablespoon of white vinegar
- 3 Potatoes diced and deep-fried
- Salt and Pepper
Instructions
- In boiling water add your beans and let them cook for 3-5 min then reserve.
- In a hot wok or pan add 2 tablespoons of vegetable oil then add the meat and seal 1 min per side, saute then reserve.
- In the same pan add onions, Ajà Amarillo paste, beans and let them cook for at least 3 min then add the meat back, saute and add cilantro, tomatoes, fried potatoes, soy sauce, vinegar a pinch of pepper, stir and it's good to go.
Notes
- Some people add eggs to this preparation, as they go well with green beans.
- The "ideal" size of the listed ingredients are "bite" size
- Sauté requires a very hot pan and little oil, sauté in portions other wise you will end with a stew.
Stir-fries are meant to be cooked fast, ingredients have to be cut into small pieces in that way they cook fast, It is a great idea to have your ingredients cut before you start.
I love the smoky flavor you get when you sautee if you don’t have a gas stove you could use smoked oil or just let the ingredients get some color before you add the next ingredient.
This dish cooks really fast, add your fried potatoes at the end, they will soak all the cooking juices if you want you can add a dash of beef stock, to add more flavor.
 Stir-fries are my favorites, they are easy and simple to prepare, they save a lot of time and usually are packed with veggies, try our recipe of Vainita Saltada, you will love it!
